As the divine festival Navratri celebration is going on all around the India, in which most of the devotees fasting for nine days to have a blessing from Mata Rani. So I thought to share with you my mom’s fasting recipe which she used to make during her fast.
How to make Aaloo Tamatar Sabji
- Preparation time: 20 mins
- Cook Time: 20 mins
- Serves: 4-5
- Taste: Spicy
Ingredients needed for Aaloo Tamatar Sabji
- Medium Large Potato – 3 (boiled and cut in cube)
- Tomato – 4 (finely chopped)
- Coriander Powder – 1 tbsp
- Fresh Coriander Leaves – 2 tbsp
- Red Chili Powder – ½ tbsp
- Curry Leaves – 5 to 6
- Cumin Seeds – 2 tbsp
- Green chili – 1 (chopped)
- Rock Salt – As per the requirements
- Ghee – 2 ½ tbsp.
- Ginger – 1 inch
- Water- 1 ½ Cup (or as much curry you required)
Preparation Method
- Heat the pan and put Ghee into the hot pan
- Now add curry leave, cumin seed and green chili.
- After the cumin seed crackle, add the finely chopped tomato.
- Add red chili powder, coriander powder and rock salt
- stir well and simmer the flame and close pan with lid
- cook for 5 mins, open the lid and stir well again
- Do same process till the oil separated from tomatoes (The process will take around 10 to 15 mints)
- Add water and keep flame medium high
- When it start boiling add boiled chopped potato and cook it for another 5 mins.
- Your Aaloo Tamatar Sabzi is ready
- Garnish it with fresh coriander
